A while back we made some cookies in our youth group. These cookies were so delicious that a number of young people have asked if we will put the recipe on the website, so here it is..!
Tollhouse Cookies*
340g plain flour
1 tsp bicarbonate of soda
1/2 tsp salt
225g unsalted butter
150g granulated sugar
150g unrefined light brown sugar
2 tsp vanilla essence
2 eggs
200g chopped pecans
150g dark chocolate chips
Pre-heat the oven to 190C. Grease and line a 23 x 33cm tin.
Sift together the flour, bicarbonate of soda and salt.
Beat the butter and sugars together with the vanilla essence. Beat in the eggs. Stir the flour mixture, nut and chocolate chips into the mixture.
Spoon the mixture into the tin. Bake for 25 minutes until golden and firm. Cool in the tin for five minutes and cut into squares. Remove from the tin and cool on a wire rack.
Store in an airtight container for three to four days.
For a crispier biscuit, put dollops of the mixture on to a greased baking tray.
You can substitute the pecans and chocolate chips for anything you like (within reason!).
